The California Bay Laurel (Umbellularia californica) is best known as a spice tree that produces bay leaves.

Less known is the fact that it also produces edible nuts.

The top picture shows an immature green nut. When the nuts ripen, it takes little more than peeling and roasting them to make for a delicious snack.

Wrap them in Bay Leaves and roast them over an open fire for a richer bay taste.
