Mule Ears

They grow throughout the West, especially in grasslands and lower elevations. Depending on the plant's location, late spring and early summer are traditional bloom times.
Like many plants, the common name, mule ears or mule's ears, comes from the plant's long leaves rather than the look of the flower.
While the flowers do not grow as large as sunflowers, they do grow to a fairly large size, and they produce edible seeds.
